Seven Swans is a Michelin-starred restaurant in Frankfurt am Main, Germany, housed in the city's narrowest building on the banks of the River Main. Under head chef Ricky Saward, who took over in 2019, it became the world's first fully vegan restaurant to hold a Michelin star, serving a set menu built on regional, organically grown produce — much of it from the restaurant's own permaculture farm — with heavy use of pickling and fermentation.
