Ingredients
For the Dough
- 130 g vegan butter— block variety works best, at room temperature
- 150 g granulated sugar
- 50 g soft silken tofu or unsweetened applesauce
- 1 teaspoon vanilla extract
- 180 g plain white flour (aka all-purpose flour)— or substitute for a gluten-free flour blend
- 1 teaspoon cream of tartar
- 1/2 teaspoon bicarbonate of soda (aka baking soda)
- 1/2 teaspoon fine sea salt
- 2 teaspoon ube powder— or substitute for blueberry powder
- 1 teaspoon ceremonial grade matcha— OMG Tea Brand
- 2 teaspoon Dutch process cocoa powder
- 3 tablespoon granulated sugar— for rolling the dough
For Decorating
- edible googly eye decorations— make sure they're vegan
- 100 g icing sugar (aka powdered sugar)
- 1 teaspoon plant milk— unflavored and unsweetened
