Cheap Dak Galbi (Soy Curls)
Dak galbi is a Korean dish that traditionally uses chicken marinated in a mix of spicy Korean sauces and stir-fried along with other ingredients. In this recipe, we use soy curls instead! Yum!

Ingredients
- 110 g soy curls
- Alternative 1: any vegan alternative — 150 g Ensemble chicken wingscut into thin strips like soy curls!
- 2 cup water— this is just used for rehydrating the soy curls!
- 3 tbsp gochujang
- 1 tbsp mirin
- Alternative 1: if not available — 1 tbsp rice vinegar + 0.5 tsp sugar
- 1 tbsp rice vinegar
- 1 tbsp soy sauce
- Alternative 1: Gluten-free alternative — 1 tbsp tamari
- 1 tbsp gochugaru
- Alternative 1: Just use gochujang — 0.5 tbsp gochujangAdd to taste if you don't have gochugaru available
- 1 tbsp garlic (minced)
- 0.5 onion— slice thinly for good sauce absorption
- 1 romaine lettuce
- 3 scallion

Notes
We had to make various substitutions (mirin/rice vinegar -> chili oil vinegar + sugar, gochugaru -> more gochujang, soy curls -> vegan chick'n replacement) but still tasted fantastic. Quick, easy to make, customize to your taste. Nice recipe!
