Ingredients

For the Pickles

  • 175 ml boiling water
  • 2 tablespoon sugaror sub for maple syrup
  • 2 teaspoon fine sea salt
  • 100 ml white wine vinegaror sub for rice wine vinegar or lime juice
  • 1 carrotpeeled and julienned or shredded
  • 1/4 daikonpeeled and julienned or shredded

For the Burgers

  • 2 vegan burgersaround 113g each
  • 2 cloves garlicfinely minced
  • 2 spring onions (green onions)finely chopped
  • 1.5 teaspoon vegan fish sauceor sub for light soy sauce
  • 1.5 teaspoon sriracha
  • 1 tablespoon fresh Thai basilfinely chopped
  • 1 tablespoon fresh corianderfinely chopped

For Serving

  • 1 tablespoon sriracha
  • 4 tablespoon Vegan Mayonnaise (4 servings)

    Ingredients

    • 110 ml soy milkunflavoured and unsweetened, at room temperature
    • 250 ml sunflower oil or any other neutral oil
    • 2 tsp rice vinegar or any white vinegarincluding white wine vinegar or apple cider vinegar
    • 1/2 tsp fine sea salt or kala namak (black salt)kala namak for a more realistic flavour
    • 1/4 tsp dijon mustard
    • 1 tbsp extra virgin olive oil or cold-pressed rapeseed oilaka Canola oil
    or vegan kewpie mayonnaise
  • 2 vegan burger bunssliced and toasted
  • 2 mini cucumbersfinely sliced or peeled into strips
  • 15 g fresh mint, coriander, and Thai basileach, or substitute with regular basil
  • 1 red chilismall, finely chopped (optional)
  • 1/2 red onionfinely sliced (optional)
  • 2 tablespoon crispy onionsoptional
  • French friescooked (optional)
